Abstract

Polytechnics are supposed to place a premium on student internships so as to better prepare their products to fit the contemporary labour market. This study examines a renewed student internship programme undertaken through collaborative design of curriculum materials. The Department of Hotel Catering and Institutional Management (HCIM), Takoradi Polytechnic in Ghana is the focus and background for the study. Teachers in the department have designed curriculum materials which, were first used for the 2010 student internship. The general perceptions of stakeholders suggest there have been improvements in internship practices and are generally satisfied with the competencies student have gained
